Simple Carrot Salad

Carrot Salad is such an easy and beautiful side dish! We all need a some bright color at dinner, don’t we?
Simple Carrot Salad
Ingredients:
10 small- medium sized organic carrots
1/2 cup organic raisins
1/2 cup mayonnaise (click here to find out how to make your own mayo!)
Directions:
Wash and grate carrots. (I use this grater to grate my carrots, but a food processor or hand grater works just as well.) Add raisins and mayo and mix until combined. Serve chilled.
Make approximately 4 cups of salad.

    My mother made this several times a week. Thanks for reminding me of a great simple salad, especially good for winter.

    Hi Rachel,

    I splurged and got myself a food processor a few months ago and I have been making a salad similar to this ever since. Mine is similar to yours, the main difference being that I use veganaise instead of mayonnaise, and I throw in some chopped nuts and shredded zuchinni too. It’s been easy to take to work for lunch!

    if you aren’t a raisin fan, what would you substitute them with?

      Any other dried fruit that you enjoy eating would probably be good. Let me know what you end up using and how you like it!
