Baked Oatmeal
Baked oatmeal is one of those breakfasts that is good any time, can be just eaten as a snack, or made well ahead of time and still enjoyed.
Our whole family enjoys this dish, and I like it because there usually is enough leftovers for the two people that have to run out the door early every morning. I’m always looking for recipes that are large enough to serve for two meals.
Baked Oatmeal
Ingredients:
6 cups rolled oats
3/4 cup cane sugar
4 teaspoons ground cinnamon
4 teaspoons baking powder
1 teaspoon salt
2 cups milk
1 cup applesauce
4 eggs
2 teaspoons vanilla extract
1/2 cup raisins
Directions:
Mix all ingredients together, pour into a 9″ x 13″ baking dish. Bake at 350° for 40 minutes. Can be served warm or cooled.

My slightly dumb question… but given the picture I take it that it comes out firm enough that you slice and lift onto a plate, rather than scooping. Is it firm enough to pick up with your hands or is it still crumbly? I’m curious 😀

After it cools it becomes more firm and you can hold it in your hands- That’s how I enjoy eating it! 🙂
We tried your recipe this morning for the first time, and it worked out perfectly! My family likes hot breakfast every day, and it’s great to have an option that takes so little effort. I was out of raisins, so I used dried cranberries, which were delicious. I tossed it together the night before and pulled it out of the fridge in the morning. Since it started cold, it did need more time to cook, but was delicious! Thank you!
Can you substitute anything for the applesauce?
You could use butter or oil, but I prefer the texture with applesauce. Another fruit puree may work ok.
Would you be able to substitute Stevia for the sugar? I am diabetic.
I think so, but I don’t have any experience with doing that.
