Avocado Chicken Salad

Avocado Chicken Salad, such a delicious and simple summer meal!
 
Warm summer days mean I don’t want to spend a ton of time in the kitchen, especially over a warm stove. We grill up a bunch of chicken breasts, have that for dinner one night, and then have extra ready to make a big bowl of this chicken salad.
Avocados are such a great source of deliciousness and combined with chicken, cilantro, and lime, it makes a wonderfully fresh and summery tasting sandwich topping.

Serve with a side of sliced veggies and a dessert of Raspberry Semifreddo, you’ve got the makings of a perfect summer evening!

Avocado Chicken Salad

Ingredients:
4 boneless chicken breast, cooked & diced 
½ medium onion, diced
1 avocado, diced
½ lime, juiced
2 tablespoons fresh cilantro, diced
½ teaspoon sea salt
Directions:
Mix all ingredients. Serve on bread or lettuce leaves.

    Made this last night for dinner! It was a hit, even with 7 and 10 year old BOYS! I did tweak the recipe quite a bit, and ended up adding TWO LARGE avocadoes to get it even close to avocado-y as needed. it was amazing. A keeper. Thanks!
