Honey Nut Brittle

I always remember having my grandmother’s peanut brittle over the holidays and am thrilled that I can make brittle out of Honey!

Honey Nut Brittle
Ingredients:
2/3 cup butter or ghee
1/2 cup honey
1 cup nuts (your choice: peanuts, almonds, pecans, walnuts, etc)
Directions:
Spread parchment paper on the bottom of a cookie sheet
Cook butter and honey over medium heat to ‘hard crack’ stage, stirring constantly.
Hard crack stage:  Keep a bowl of cold water near the stove, drop a few drops of the honey/butter into the cold water. When it reaches ‘hard crack’ stage, it will get hard when it hits the water.  (or if you have a candy thermometer, till it’s 300 degrees F). Between 5-10 minutes.
Stir in the nuts.  Pour onto parchment paper cookie sheet. Refrigerate, to cool.
Pull out the paper and candy and break into pieces.
This is awesome served with hot buttered coffee!

    I used to eat peanut brittle as a child and I loved it! Your recipe sounds like a much healthier option!

    I believe you have not tried this recipe. This will not work because honey hard crack stage is much higher than sugar.

      The picture is mine, I wrote exactly what I personally did- it worked great and tastes great. I’ve made it several times.

        Ha ha. It’s pretty funny that Darren would presume that you’ve never made a recipe that you’ve posted! Honey IS different, but a good cook can just tell when the candy is at the right stage!

      I’m sorry Jaimie, I don’t remember how much I had. I think maybe enough to fill a quart bag, but it may have been more than that.

    I never made candy before and this was very easy and it came out great. I used unsalted nuts and butter and sprinkled coarse sea salt on top. I will definitely save this recipie to my favs.

    Hi, I have a question about this recipe: does it become soft and sticky if left at room temperature? I want to make this in oregon and bring it to Ny to give to my family for a christmas gift (we have our own honey from our backyard hive). but i’m worried about it turning to a sticky mess during the trip. How does it do if left at room temp?

      It did fine for me at room temperature. I don’t remember it sticking together or getting sticky at all.
