Patty Pan in a Pot

We love patty pan squash! When they come to the farmer’s market I load up! They keep for weeks, just store in a cool dry place.
Patty Pans should feel similar to a zucchini to the touch. The old ones have tough skin, so it’s important to pick them before they get old on the vine.

Medium sized Patty Pan: about the
size of a hand.

Patty pan squash come in various sizes and colors, all are delicious!
This meal is a definite must to celebrate the beginning of harvest!

Ingredients:
1 pound grass fed ground beef
2 medium sized patty pan squash, chopped
1 onion, chopped
Broth

Chopping a Patty Pan Squash

Sea salt
Directions:
Brown ground beef with onion. When beef is browned, mix in squash, adding broth until just covering squash. Bring to a boil on medium high heat, then turn down and simmer, covered, on low for about 30 minutes or until squash becomes soft. Salt to taste.
