The Easiest Way to Cook Butternut Squash

The sweet smell of butternut squash roasting is intoxicating!
Butternut squash is very versatile, making main dishes, like butternut squash soup and subbing it for pumpkin in pie is just delicious! I bake several squash at a time and freeze containers of it for easy meals or to serve as a simple side dish.
Here we go- minimalist cooking at it’s best!
The Easiest Way to Cook a Butternut Squash
1. Wash squash, remove any stickers
2. Place in oven
3. Bake at 350 degrees F until soft to the touch (wear oven mits) 30-90 minutes, depending on size of squash.
4. Allow to cool
After it’s cooled, cut the squash in half. Scoop out seeds, peel skin off and discard, saving the meat.*Note:
Do not poke holes in the squash. (I’ve never had a squash explode.) If you poke holes in them, it will drip into your oven. Sometimes one can get an exceptionally moist squash and it will naturally crack and leak, but for the most part, they are very clean.

    My son did this one day and I thought it was funny and because he was a “male” but it worked fine and here it is officially!!

    I like to steam butternut squash and lightly fry the seeds in a little coconut oil, but this does look like a simple and tasty way to cook them.

    I don’t know, I think I’d be too afraid of a squash exploding… I always cut them up before I cook them. (all kinds of squash, not just butternut)
