Grain Free [Gluten Free] Coconut Flour Pancakes
I love the fact that these are packed with protein and healthy fat that fill the kids up- it’s a great way to start the day out right!

Grain Free [Gluten Free] Coconut Flour Pancakes
Ingredients:
5 eggs
1/3 cup coconut oil, melted
3 tablespoons coconut flour
1 teaspoon honey
Pinch of salt
Directions:
In a mixing bowl, blend eggs, honey and salt, using an immersion blender. While blending, pour in melted oil and sprinkle in coconut flour until fully incorporated. Allow to sit 2 minutes.
Pour about 2 tablespoons of batter onto heated and oiled griddle. Cook 2-4 minutes per side. Makes 20-25 silver dollar pancakes.

Is this recipe enough to fill your family up? We’re going to attempt to go wheat free and see if is helps a few things but we don’t have much in the way of GF choices here for baking.

Depends on the day! I typically double it, but often that leaves left-overs. Coconut flour is more filling than most grains.
Do you think these would still turn out well if the ingredients were mixed by hand? I don’t have an immersion blender and I’m not even sure what it does (blend slowly, maybe?). I do have a Vitamix. Not sure if it would blend slowly enough?

It would work in your vitamix. An immersion blender is exactly like a blender, but on a stick, (basically). You need something that mixes very well, because coconut flour can clump easily, so a regular blender will work well.
