What could possibly be better than a warm bowl of chili in the evening?
I could eat this chili every day!!
I have had quite a few people over for a meal and see their face drop when they hear we’re eating lentils for dinner… and then they try a bite and that is all it takes! Pretty soon everyone has had seconds and the pot is empty. One friend said “I hate lentils, but for some reason, I always eat them at your house.”
Yeah, because Lentil Chili is the bomb!
It will work with regular dry lentils or sprouted.
Super Easy Lentil Chili
3 cups uncooked lentils
Bone broth to cover lentils
1 cup salsa
1 tablespoon coarse sea salt (or to taste)
Put lentils in a large sauce pot, pour in bone broth to cover lentils. Bring to a boil and then turn down to a medium heat and simmer for approximately 45 minutes.
When lentils are soft, or to the desired texture, add salsa and salt and simmer another 30 minutes, allowing the flavors to combine.
My favorite way to eat this is with a dollop of sour cream and organic corn chips.
