Bell Pepper Salad

I love getting peppers from the farmer’s market. They often have heirloom varieties, which means they have a huge variety of colors. In this batch we had red, orange, yellow and purple.

Bell Pepper Salad
3 or 4 different colored peppers
1 cup vinaigrette dressing (I use Bragg’s)
Dice peppers, place in a bowl. Add vinaigrette and stir together. Serve chilled.
