Real Food Chocolate Pudding- So Simple and Delicious!
 
I just got Sylvie McCracken’s new book: The Gelatin Secret. And let me tell you, I am in love! First, I already loved gelatin (such a beautiful, amazing super food!) and the benefits of it. But Sylvie did such a great job making all the pictures so appetizing and really, quite easy, I want to make every recipe. (And the fam sure wouldn’t complain if I did!)
In her book Sylvie shares their real food journey and difference real food made in her health. She has definitely overcome quite a lot and it’s an inspiring story. There is such power to heal inside us, if we just treat our bodies right, they can do amazing things!

Chocolate pudding is often considered a junk food, but, this is actually a perfect real food treat: natural sweeteners, the benefits of gelatin, healthy fats from coconut or grass fed cows. Really, it’s something I’m happy to serve my family and feel no guilt about what-so-ever.
 
Chocolate Pudding
Ingredients:
13.5 oz (1 can) full-fat coconut milk or 1 3/4 cups raw whole milk
1/3 cup soy-free, dairy-free chocolate chips (I use Enjoy Life)
1 tablespoon gelatin (Get this one from grass fed beef)
1 teaspoon vanilla extract
1 teaspoon honey (preferably raw) optional
Directions:
1. Add all ingredients (excluding the gelatin) to small pot and warm on low/med heat
2. Use the immersion blender to blend ingredients
3. Add gelatin and mix again with the immersion blender
4. Turn off heat and pour into container to cool
5. Put in fridge for 1 hour
6. Enjoy!
