Eggplant Parmesan

I love summer when so many different vegetables are available from the farmer’s market! So far, I haven’t been able to successfully grow eggplant in my own garden, but many of the booths have beautiful eggplants tempting me!
Eggplant Parmesan
Ingredients:
2 lbs ground beef
1 onion, diced
1 large tomato, diced
2 medium eggplants, diced
Salt to taste

Grated Parmesan cheese
Directions:
In cast iron or oven proof skillet, on medium heat, brown ground beef with onion. When meat is cooked through, salt to taste and add tomato and eggplant. Cook, stirring occasionally, about 15 minutes. Sprinkle on parmesan cheese and broil in oven until cheese is melted. (3-5 minutes.)
Serve with a fresh green salad or veggie tray.
