Coconut and Chocolate Candy

Are you always looking for new ways to increase your coconut oil intake? I am!!
And I LOVE putting it in candy.

Coconut & Chocolate Candy
Ingredients:
1 cup coconut oil (solid) (Click here for coconut oil)
1 cup peanut butter (Click here for organic peanut butter)
1/3 cup coconut cream concentrate (Click here for coconut cream concentrate)
1/4 cup honey (Click here for raw organic honey)
1/2 cup chocolate chips (Click here for fair trade chocolate chips)
Directions:
Line a shallow baking pan with parchment paper, sprinkle the chocolate chips on the parchment paper. Blend remaining ingredients in a food processor, pour over chocolate chips. Place baking pan in the freezer for about 30 minutes. When cold, pull parchment paper out and place on cutting board. Cut candy into squares.
These are easier to cut if they are not quite frozen, but they taste best when they are completely frozen.

Oh this is so good! I’m on my second batch and left out the chocolate this time. I didn’t like how hard the frozen chocolate got but it is awesome either way! Looking forward to trying it with other nutbutters.
