Eggs Florentine

I have a love affair with eggs. Not just eggs, fresh free range eggs. I make myself 2 or 3 every morning for breakfast, having a savory breakfast makes me feel warm and comfortable all morning!
But you don’t have to eat this just for breakfast!

Eggs Florentine
Ingredients:
10 ounces frozen chopped spinach, thawed
1/2 cup heavy cream
1/2 cup grated parmesan cheese
1 clove garlic, minced
4 eggs
Directions:
Combine everything, except the eggs, in a 9 or 10 inch skillet, heat on medium heat for about 8 minutes. Using a spoon, make 4 “wells” and break 1 egg in each  “well”. Turn the heat to low and cover with a lid. Cook till egg whites are solid, approximately 4 – 5 minutes.
