Grain Free [Gluten Free] Peanut Butter Chocolate Chip Cookies


This is an awesome snack food! Lots of protein and a little bit of sweetness. Leave out the chocolate chips and let the kids have cookies and milk for breakfast! Yeah, you can be that awesome mom!

Grain Free [Gluten Free] Peanut Butter Chocolate Chip Cookies

Ingredients:
1 cup natural peanut butter
4 eggs
1/2 cup honey
1/2 cup semi-sweet chocolate chips
1/4 cup coconut flour
Directions:
Mix together well, place by spoonfuls on grease (or parchment paper) baking sheet. Bake at 375˚ for 12-13 minutes.

    Hi! I just mixed the ingredients in the food processor, it’s very runny so I put it in a glass 8×8 pan. cookie bars still sound good! I’ll let you know how they turn out 🙂

      I find if I allow coconut flour baked goods to sit for a minute they thicken up quite a bit.

    These look really good! What type of peanut butter did you use?? I wonder if powdered peanut butter would work???

      I just used an organic peanut butter, I’ve used several different brands, they all work. I have never used a powdered peanut butter though. Let me know if you try it and how it works!

    These are so runny they look like crepe batter and after baking ran altogether.

      I’ve never had them be runny. Did you use coconut flour? It won’t work the same with any other flour.
