 Potato and Onion Pancakes

Starting your day with something savory instead of  loads of sweets can be a refreshing change. This has been a sure-fire win with my younger boys who prefer savory dishes. Excellent dish for a relaxing weekend breakfast, when you aren’t in a rush, but easy enough they don’t take up your entire morning.
Give this a try on Saturday… You’ll thank me!

Potato and Onion Pancakes
Ingredients:
3 medium potatoes, peeled, washed and quartered
1 small onion, quartered
1 egg
1/2 teaspoon salt
coconut oil to fry
Directions:
Heat frying pan or griddle to a medium heat. Place onion, egg and salt in food processor. Turn on to high and add potatoes one at a time, until well blended. Drop about 1/4 cup onto hot oiled griddle, frying approximately 5 minutes per side.
Serve with a dollop of sour cream, plain yogurt or applesauce.

    Hi Rachel,

    Please could you tell me why you choose to use the electric pancake griddle? Is it cheaper or easier to use than heating a frying pan?
