Steak Fajita Kabobs
Summer is my husband’s time to cook. Well, sort of. I still do most of the prep work, but once meat and veggies are chopped and marinating, I leave the rest up to him. He enjoys being a grill master… and I enjoy letting him!
This meal is super delicious, all the kids love it (the little ones especially enjoy eating off sticks!) and if we have a big group of people, we just grill the steak separately, chop it up and serve fajitas. It’s so good, seriously, my mouth is watering again as I think about it!
Steak Fajita Kabobs
Ingredients:
3 peppers, chopped
1 onion, chopped
3 pounds beef steak, cubed in 1 inch pieces (Sirloin is wonderful)
Marinade:
½ cup lime juice
½ cup extra virgin olive oil
3 tablespoons taco seasoning (Click here for my 5 ingredient taco seasoning recipe)
Directions:
Place meat, peppers and onions randomly on the skewers. Place in dish and pour marinade over. Allow to marinate 15 minutes to 2 hours. Grill on medium high heat for about 15 minutes; turning 2 or 3 times to cook evenly.
Tip:
Soak wooden skewers in water while you chop meat and veggies. This will prevent them from burning completely on the grill.
