Peach Semifreddo

Peach Semifreddo. A delightfully simple summer dessert.

 

Semifreddo is a refreshing frozen yogurt dessert, basically meaning “semi- frozen”. This is a healthy treat, so no guilt involved when you serve this dish!

 

This is one of my favorite desserts. It’s delicious, easy to make and can be made ahead of time, so I don’t have to stress over making dessert when I have other things going on. Plus, peaches add a delightful summer flavor.

 

Peach Semifreddo

Ingredients:
2 cups plain yogurt
3 eggs*
1/3 cup honey

1 cup fresh peaches, diced and mashed slightly
1 teaspoon organic sugar
Directions:
Mix peaches and sugar together, mashing slightly. Allow to sit for 10 minutes.
Thoroughly mix yogurt, eggs and honey. Line a loaf pan with parchment paper, folding the corners. Pour in the yogurt/egg mixture.  Pour the peaches onto the yogurt mixture, swirling slightly. Spread evenly- so it freezes with a flat “top”. Allow to freeze 8 hours or overnight.
Pull out of freezer about 10 minutes before serving. Place upside down on plate, removing paper. Cut into slices and serve.
