Gluten Free Peanut Butter Flax Breakfast Bars
 
Breakfasts are always busy times and, even though I typically get up early enough to make breakfast, I really enjoy having things the kids can grab right away and start eating. (Why do they have to be intensely hungry as soon as their eyes open??) It means there aren’t so many questions and requests before I get coffee. Which, in turn, insures that everyone’s day goes smoother.
These are also great for a simple lunch (for home, or to pack!), just add some veggies and a cheese stick. It sure beats out a pb&j sandwich!
 

Gluten Free Peanut Butter Flax Breakfast Bars

Ingredients:
2 cups old-fashioned rolled oats
1/2 cup flax seed
1/4 tsp salt
3/4 cup peanut butter
1/2 cup honey

Directions:
Mix the oats, flax seed, and salt in a mixing bowl. Heat peanut butter and honey just until warm combined. Pour this on top of oat mixture. Stir to incorporate. Press into a 8×8″ pan and chill overnight.  Slice and serve.

If you have extras, just keep them in the fridge, separated by parchment paper.
