Grain Free Chocolate Cake

We eat mostly grain free. Sometimes I will make quick breads with flour, but always gluten free. I had to give up gluten to get rid of my every-other-day migraines. Sometimes I miss bread, soft pastries and doughnuts… but then I remember that half my life was spent laying on my bed with ice on my neck, heat on my forehead with all the lights off and then… giving up bread doesn’t seem so bad.
Anyway, so generally we eat grain free.
Just as a warning, this cake is dense. But it completely hit the spot when I was wanting something chocolate and sweet and it was wonderful with a tall glass of raw milk!
My middle son liked it so much he requested it for his birthday with a chocolate ganache cascading over the sides. Yes, it was delicious.
Grain Free Chocolate Cake
Ingredients:
2 cups peanut butter
1 1/2 cups honey
6 eggs
1 cup cocao powder
1/4 cup coconut flour
Directions:
Mix all ingredients, pour into 9″ x 13″ baking dish. Bake at 350 degrees for 40 minutes.
