Strawberry Semifreddo - a simple frozen yogurt dessert

Semifreddo is a wonderfully simple, and yet very elegant dessert. An impressive frozen yogurt dessert, it’s easy to throw together days ahead, so you don’t have to put in any extra time for dessert they day of a dinner party.
It’s really one of my favorite ice cream treats, since I don’t have to have an ice cream maker and I can eat it whenever I’m in the mood for a treat. I’m known for having several different flavors in the freezer at any given time, you know, just because. 🙂
 

Strawberry Semifreddo

Ingredients:
2 cups plain yogurt
3 eggs*
1/3 cup honey

1 cup fresh strawberries, diced and mashed slightly
1 teaspoon organic sugar
Directions:
Thoroughly mix yogurt, eggs and honey. Line a loaf pan with parchment paper, folding the corners. Pour in the yogurt/egg mixture. Mix strawberries and sugar together, mashing slightly. Allow to sit for 10 minutes. Pour the strawberries down the center of the loaf and swirl slightly. Spread evenly- so it freezes with a flat “top”. Allow to freeze 8 hours or overnight.
Pull out of freezer about 10 minutes before serving. Place upside down on plate, removing paper. Cut into slices and serve.
